Tasty Tuesday- Roast Chicken Pizza

Yes, I am still alive here. I know I haven't posted much lately, especially any new recipes. With being gone last week and my hubby gone the week before, I haven't had a whole lot of time to write much lately. And with my nausea increasing the last couple weeks, I've had zero desire to cook anything. But I did find a great recipe last week that I thought you might enjoy. Hubby and I went to a young cooperators meeting for our dairy coop last week and one of the afternoons, the ladies got to meet with a really good cook who comes up with some of the recipes to use the dairy products we produce. One of the recipes was a delicious chicken pizza that works great for a dinner or can also be used for an appetizer.

2 loaves frozen bread dough, thawed
olive oil
1 1/2 to 2 cups Darigold Crema Mexicana Agria (the Mexican sour cream)
4 Tbsp Italian seasoning
hot pepper flakes to taste (optional)
3 cups shredded cooked chicken
6 small tomatoes thinly sliced
1/2 cup chopped red onion
freshly ground black pepper
1 cup shredded Italian blend cheese

Roll one loaf thawed dough to 12x8 rectangle and transfer to lightly greased cookie sheet: repeat with remaining dough and transfer to same baking sheet. Pinch together and join dough to make 12x16 inch rectangle. Brush surface with olive oil. Bake at 375 degrees for 10-15 minutes or until crust is lightly browned. Combine Crema Agria, Italian seasonings, and pepper flakes and mix well. Spread cream mixture evenly over top of crust. Scatter shredded chicken over top of cream mixture and top with tomato slices and onion. Dust with pepper and sprinkle cheese over top. Bake at 350 degrees for 15 minutes or until pizza is bubbly. Cut into squares and serve immediately.

Some variations in toppings could be sliced eggplant, artichoke pieces, sliced mushrooms or sweet bell peppers.
You can also use a different variety of things for the crust. Ready cooked pizza crusts or English muffins would be easy. When Joanne was preparing this for us, she used Naan bread (a flat bread that she found at Trader Joe's) and that was also easy and very delicious!

Have fun trying this recipe and using different ingredients to make it how you like it. I really hope you have Mexican sour cream in a store near you because it is so good! It is a little saltier and thinner than regular sour cream, but regular would probably also work for this recipe. Enjoy!

Orange Belt!

Buddy has still been working hard at his Tae Kwon Do lessons and yesterday he took another belt test and he passed with flying colors! He is now an orange belt. He was the only one in his age group to take the test, so he got to stand in front of everyone all by himself and he went very first. I would have been so nervous, but he did great! Unfortunately the camera died after only 2 pictures, so we didn't get any of him breaking his board or getting his new belt and certificate.

Sweetie didn't take the test this time because a couple months ago, she decided she didn't like Tae Kwon Do much anymore and really wants to do ballet. Maybe in a couple years we'll look into that.

An Exciting Day!

Happy Birthday to my Hubby!


Today is my hubby's birthday! It's his last year in his 20's! We had a good morning going to church and then heading to his parents house for lunch to celebrate with them. We are so thankful for another year to spend with him and pray for many, many more! He is such a great husband to me, dad to Buddy, Sweetheart, Lovebug, and Baby, hard-worker for our farm, and friend to everyone he knows. We all love you so much! Happy Birthday!

And that was not the only excitement for the day! If you didn't catch it in the paragraph above, we announced that we are having another baby! He/She will hopefully be here in late September. So far everything is going well, some morning sickness, but nothing like my last one, so we are praying all will continue to go as well!

First Tooth!

Buddy has had a loose tooth for a few weeks now and has very patiently been wiggling it and waiting for it to come out. He would not let anyone help and pull it out, he wanted it to come out all by itself. Well, it finally came out last night! We were eating pizza for dinner and once he started to talk to me and I noticed that there was a gap in he teeth! I asked him where his tooth was and he couldn't figure out what I meant, he said it was still in his mouth. He didn't believe me that it was gone until he stuck his finger in the hole. But he couldn't find the tooth! The poor boy must have swallowed it with his pizza! The first thing he wanted to know was if the toothfairy would still come. I told him we could write her a note and explain that he accidentally swallowed it, and he was pretty relieved. He was also very excited to find the dollar (she was all out of quarters!) that she left him this morning!
